A crisp, refreshing salad of lettuce, radish, and apple tossed in a tangy cider vinaigrette with a hint of onion. Light, bright, and best served freshly mixed.
Ingredients
Apple cider vinegar⅛cup
Olive oil, or salad oil of choice¼cup
Onion, or scallion/shallot, minced1-2onions
Salt & pepper, to taste
Lettuce mix1bunch
Radishes, thinly sliced4-5radishes
Apple, peeled if desired, cored and finely diced1apple
Instructions
Whisk together vinegar, oil, onions, salt and pepper.
Combine lettuce, radishes and apple together.
Toss salad with dressing just prior to serving.
