Golden, crispy fritters made with tender broccoli, cheddar cheese, and herbs. Baked until crunchy on the outside and soft inside, they’re a simple and flavorful snack or side dish.
Ingredients
Broccoli, boiled or steamed6cups
Eggslarge
Garlic powder½Tsp
Onion Powder½Tsp
Italian seasoning1Tsp
Salt½Tsp
Black Pepper¼Tsp
Bread crumbs1cup
Cheddar cheese, shredded2cups
Instructions
Preheat a convection oven to 350°F. Line two baking trays with baking paper. Set aside.
Cut your broccoli into florets, wash it and boil or steam your broccoli until tender. Steam for 6 minutes or boil for 8 minutes. Drain well and allow to cool. Once cooled, dry excess moisture with a paper towel and chop up coarsely.
Add broccoli to a large mixing bowl with the remaining ingredients. Mix together. The mixture will seem dry but will come together in the oven. Chill mixture for 20 minutes in the fridge.
Roll mixture into balls or disc shapes and place on a baking tray. Bake in the oven for 15 minutes, then flip and bake for a further 15 minutes or until golden and crispy.
Let rest for 15 minutes before serving so they don’t fall apart. This dish is great paired with tzatziki or other yogurt based sauces!
