Ingredients
- Broccoli, boiled or steamed 6 cups
- Eggs large
- Garlic powder ½ Tsp
- Onion Powder ½ Tsp
- Italian seasoning 1 Tsp
- Salt ½ Tsp
- Black Pepper ¼ Tsp
- Bread crumbs 1 cup
- Cheddar cheese, shredded 2 cups
Instructions
- Preheat a convection oven to 350°F. Line two baking trays with baking paper. Set aside.
- Cut your broccoli into florets, wash it and boil or steam your broccoli until tender. Steam for 6 minutes or boil for 8 minutes. Drain well and allow to cool. Once cooled, dry excess moisture with a paper towel and chop up coarsely.
- Add broccoli to a large mixing bowl with the remaining ingredients. Mix together. The mixture will seem dry but will come together in the oven. Chill mixture for 20 minutes in the fridge.
- Roll mixture into balls or disc shapes and place on a baking tray. Bake in the oven for 15 minutes, then flip and bake for a further 15 minutes or until golden and crispy.
- Let rest for 15 minutes before serving so they don’t fall apart. This dish is great paired with tzatziki or other yogurt based sauces!
