This hearty soup combines tender potato and kale with savory sausage in a flavorful broth. Use your favorite sausage, or substitute white beans for an easy vegetarian version.
Ingredients
Sausage, sliced, such as linguiça, Spanish chorizo, kielbasa, or Italian sausage1Lb
Onion, chopped1onion
Garlic, minced1clove
Potatoes, peeled & diced2large potatoes
Kale, stems removed & coarsely chopped1bunch
Chicken broth4cups
Balsamic vinegar1Tbsp
Tomatoes, diced3tomatoes
Saltto taste

Instructions
Heat a large pot over medium heat. Add the sausage and cook for about 5 minutes, stirring occasionally, until lightly browned. If the sausage is very lean, add a small amount of oil as needed.
Add the onion and cook for 3–4 minutes, until softened. Add the garlic and cook for about 30 seconds.
Add the potato, kale, broth, and balsamic vinegar. Bring to a boil, then reduce the heat to low. Cover and simmer for 30–40 minutes, or until the potato and kale are tender.
Stir in the tomato and simmer uncovered for another 10 minutes.
Taste and season with salt and black pepper as needed. Serve warm.
Notes
Sausage options: Linguiça or Spanish chorizo gives the soup a smoky, savory flavor, but kielbasa, Italian sausage, chicken sausage, or another favorite sausage will also work.
Vegetarian option: Replace the sausage with 1 can (15 oz) white beans, drained and rinsed, and replace the chicken broth with vegetable broth. Heat 1 Tbsp olive oil in the pot before cooking the onion. Add the beans along with the broth.
