Ingredients
- Sausage, sliced, such as linguiça, Spanish chorizo, kielbasa, or Italian sausage 1 Lb
- Onion, chopped 1 onion
- Garlic, minced 1 clove
- Potatoes, peeled & diced 2 large potatoes
- Kale, stems removed & coarsely chopped 1 bunch
- Chicken broth 4 cups
- Balsamic vinegar 1 Tbsp
- Tomatoes, diced 3 tomatoes
- Salt to taste
- Black pepper to taste
Instructions
- Heat a large pot over medium heat. Add the sausage and cook for about 5 minutes, stirring occasionally, until lightly browned. If the sausage is very lean, add a small amount of oil as needed.
- Add the onion and cook for 3–4 minutes, until softened. Add the garlic and cook for about 30 seconds.
- Add the potato, kale, broth, and balsamic vinegar. Bring to a boil, then reduce the heat to low. Cover and simmer for 30–40 minutes, or until the potato and kale are tender.
- Stir in the tomato and simmer uncovered for another 10 minutes.
- Taste and season with salt and black pepper as needed. Serve warm.
Notes
- Sausage options: Linguiça or Spanish chorizo gives the soup a smoky, savory flavor, but kielbasa, Italian sausage, chicken sausage, or another favorite sausage will also work.
- Vegetarian option: Replace the sausage with 1 can (15 oz) white beans, drained and rinsed, and replace the chicken broth with vegetable broth. Heat 1 Tbsp olive oil in the pot before cooking the onion. Add the beans along with the broth.
