A simple roasted butternut squash dish with a warm blend of spices and a touch of sweetness. Tender and lightly caramelized, it’s an easy and flavorful side for any meal.
Ingredients
Butternut Squash, peeled and chopped (see below)1large squash
Olive oil3Tbsp
Brown sugar3Tbsp
Onion powder3/4Tsp
Garlic powder3/4Tsp
Paprika1/2Tsp
Salt1/2Tsp
Black pepper1/4Tsp
Cayenne pepper, optional1/4Tsp
Instructions
Preheat oven to 425°F. Coat a large rimmed baking sheet with non-stick cooking spray.
Chop the butternut squash into small cubes.
Place butternut squash in a large mixing bowl and toss with olive oil. Set aside.
In a small dish, combine all the spices. Sprinkle over the oil coated butternut squash and toss until spices are evenly distributed. Pour squash out onto prepared baking sheet. Bake for 15 minutes, then use a spatula to stir and flip squash and bake for an additional 15 minutes or until fork tender and nicely browned.
