Spiced Roasted Butternut Squash

A simple roasted butternut squash dish with a warm blend of spices and a touch of sweetness. Tender and lightly caramelized, it’s an easy and flavorful side for any meal.

Ingredients
  

  • Butternut Squash, peeled and chopped (see below) 1 large squash
  • Olive oil 3 Tbsp
  • Brown sugar 3 Tbsp
  • Onion powder 3/4 Tsp
  • Garlic powder 3/4 Tsp
  • Paprika 1/2 Tsp
  • Salt 1/2 Tsp
  • Black pepper 1/4 Tsp
  • Cayenne pepper, optional 1/4 Tsp

Instructions
 

  • Preheat oven to 425°F. Coat a large rimmed baking sheet with non-stick cooking spray.
  • Chop the butternut squash into small cubes.
  • Place butternut squash in a large mixing bowl and toss with olive oil. Set aside.
  • In a small dish, combine all the spices. Sprinkle over the oil coated butternut squash and toss until spices are evenly distributed. Pour squash out onto prepared baking sheet. Bake for 15 minutes, then use a spatula to stir and flip squash and bake for an additional 15 minutes or until fork tender and nicely browned.
