Spinach Basil Pesto Recipe

Ingredients
- Spinach leaves, cups 1½ cups
- Fresh basil leaves 3/4 cup
- Pine nuts, toasted 1/2 cup
- Olive oil, divided 1/2 cup
- Garlic, peeled and quartered 4 cloves
- Lemon juice, freshly squeezed 1 Tbsp
- Salt 3/4 Tsp
- Lemon zest 1/2 Tsp
- Black pepper 1/2 Tsp
- Parmesan cheese, grated 1/2 cup
Instructions
- Place spinach, basil, pine nuts, Parmesan cheese, 2 tablespoons olive oil, garlic, lemon juice, salt, lemon zest, and pepper into a food processor; blend until nearly smooth, scraping the sides of the bowl with a spatula as necessary.
- Drizzle remaining olive oil into the mixture while processing until smooth.
- Enjoy on pasta, sandwiches, salad, vegetables and more.
