Cold Weather Crops


Believe it or not, spring is fast approaching! There are many crops that can be planted in the early spring, as soon as your garden beds are ready to be worked. Cold tolerant plants can be planted even when there is a risk of frost, and many crops actually prefer the colder weather. This includes greens like lettuce, arugula, and spinach. Plants in the brassica family are often planted in colder weather, like kale, collards, and broccoli. Many root crops like radishes, beets, and carrots also do well in the cold. Once the few inches of your soil have thawed, these crops are ready to go into the garden.
