Blue Kiss Tea
A refreshing summer beverage with homemade boba pearls. Add some milk or sweet cream for a richer, more decadent treat.

Ingredients
- Blueberry 1 pint
- Tapioca powder 1 cup
- Brown Sugar 1 cup
- Water 2 cups
- Hibiscus tea 2 bags
Instructions
- Wash the blueberries and lemon balm thoroughly.
- Blend the blueberries until smooth. Set aside.
- In a separate bowl, add tapioca flour gradually. Knead the flour into a dough gradually. Knead the flour into a dough that's firm but pliable, not too soft or sticky.
- Shape the dough into small balls, forming the boba pearls.
- Bring a pot of water to a boil. Add the boba pearls and cook for 10-15 minutes, or until they become translucent. Drain the cooked pearls and rinse under cold water.
- In a saucepan, combine brown sugar and a little water. Heat gently to dissolve the sugar, creating a simple syrup. Add the blended blueberries and simmer for a few minutes.
- Let the syrup cool completely and then refrigerate overnight.
- Brew two hibiscus tea bags in hot water for 10 minutes. Remove the tea bags and let the tea cool.
- In a serving glass, add a few cooked boba pearls, some crushed blueberries, chilled blueberry syrup, and the cooled hibiscus tea. Garnish with a sprig of fresh lemon balm.
