Asian Sweet & Sour Cucumber Salad
Crisp cucumber tossed in a simple sweet-and-tangy dressing makes a refreshing side dish that comes together in just a few minutes.

Ingredients
- Cucumber, thinly sliced 2 medium cucumbers
- Salt 1/2 Tsp
- Rice vinegar 2 Tbsp
- Sugar 1 Tbsp
- Soy sauce 1 Tsp
- Sesame oil 1 Tsp
- Garlic, minced 1 clove
- Red pepper flakes, optional 1/4 Tsp
- Sesame seeds, optional 1 Tsp
Instructions
- Toss the cucumber with salt and let sit for 10–15 minutes. Drain off the excess liquid.
- In a small bowl, stir together the rice vinegar, sugar, soy sauce, sesame oil, and garlic until the sugar dissolves.
- Add the dressing to the cucumber and toss to combine.
- Top with red pepper flakes and sesame seeds, if using. Serve immediately or chill before serving.
Notes
White vinegar or apple cider vinegar can be substituted for rice vinegar.
