Thyme Roasted Sweet Potato
A simple roasted sweet potato dish flavored with fresh thyme and garlic. Tender on the inside with lightly crisp edges, it’s an easy and savory side with a hint of heat.

Ingredients
- Sweet Potato, peeled and cut into 1½-inch thick rounds 4 large ones
- Olive oil 3 Tbsp
- Thyme leaves 1/3 cup
- Garlic 4 cloves
- Salt 1/2 Tsp
- Red Pepper Flakes 1/2 Tsp
Instructions
- Preheat oven to 450°F.
- Cut the sweet potatoes into rounds.

- Combine sweet potatoes, thyme, olive oil, garlic, salt, and red pepper flakes in a bowl until evenly coated. Arrange coated sweet potato slices in a single layer on a rimmed baking sheet or 9×13-inch baking dish.
- Place baking sheet on the top rack of preheated oven; roast until sweet potatoes are tender and slightly browned, about 40 minutes.
