Moonblush Tomatoes
A simple way to concentrate the flavor of fresh cherry tomatoes using the oven’s residual heat. These soft, intensely flavored tomatoes are great in salads, pasta, sandwiches, or served with cheese. The tomatoes sit in the turned-off oven overnight, so most of the preparation happens while you sleep.

Ingredients
- Cherry tomato, halved 1 Lb
- Salt, to taste 1 Tsp
- Sugar 1/4 Tsp
- Dried thyme 1 Tsp
- Olive oil 2 Tbsp
Instructions
- Preheat oven to 450°F.
- Arrange the tomatoes cut-side up in a baking dish or on a rimmed baking sheet.
- Sprinkle evenly with the salt, sugar, and thyme. Drizzle with olive oil.
- Place the tomatoes in the oven and immediately turn the oven off.
- Leave the tomatoes in the closed oven overnight, without opening the oven door.
- Serve at room temperature, or refrigerate in an airtight container for up to 5 days.
