Ingredients

  • Bok Choy 1 lb
  • Garlic, optional 1–2 cloves
  • Cooking oil 1 Tbsp
  • Salt 1/4 Tsp
  • Black pepper, to taste
  • A splash of soy sauce or sesame oil, optional

Instructions

  • Wash the bok choy well. Separate the leaves and rinse thoroughly, especially near the base where dirt can collect.
  • Chop into bite-sized pieces. Keep the white stems and green leaves in two piles.
  • Heat oil in a large pan or skillet over medium-high heat.
  • Add garlic and cook for about 30 seconds until fragrant.
  • Add the bok choy stems first and stir-fry for 1–2 minutes.
  • The stems cook a little slower than the leaves, so adding them first helps everything finish evenly.
  • Add the leafy greens and sprinkle with salt.
  • Stir-fry for another 2–3 minutes, until the leaves are wilted and the stems are tender but still slightly crisp.
  • Add black pepper and a splash of soy sauce if using. Serve warm.
