Asian Pear Galette
This simple, rustic galette is a great way to enjoy crisp Asian pears. Brown sugar, vanilla, and lemon bring out the pears’ natural sweetness, while the buttery crust bakes until golden and crisp. Serve it on its own or with whipped cream or vanilla ice cream.

Ingredients
For the crust
- All-purpose flour 1 cup
- Sugar 2 Tbsp
- Salt 1/2 Tsp
- Unsalted butter, very cold & cut into small pieces 7 Tbsp
- Apple cider vinegar 1 Tbsp
- Ice water, as needed 2-3 Tbsp
For the filling
- Asian pear, cored & thinly sliced 2 pears
- Brown sugar 3 Tbsp
- Vanilla extract 1/2 Tsp
- Lemon zest 1 Tsp
- Lemon juice 1 Tbsp
- Salt 1 pinch
For finishing
- Heavy cream or milk 1 Tbsp
- Coarse sugar or regular sugar, optional 1 Tbsp
Instructions
- In a large bowl, stir together the flour, sugar, and salt. Add the cold butter and use a fork, pastry cutter, or your fingers to work it into the flour until the mixture contains small, pea-sized pieces of butter.
- Add the vinegar and 2 Tbsp ice water. Mix until the dough begins to come together. Add a little more water if the dough seems too dry.
- Shape the dough into a disk, wrap or cover, and refrigerate for at least 1 hour.
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a bowl, gently toss the sliced Asian pear with the brown sugar, vanilla, lemon zest, lemon juice, and salt.
- On a lightly floured surface, roll the chilled dough into a roughly 10 to 12-inch circle. Transfer it to the prepared baking sheet.
- Arrange the pear slices in the center of the dough, leaving a 1 1/2 to 2-inch border around the edge. Fold the edges of the dough over the pears, pleating the dough as needed.
- Brush the exposed crust with heavy cream or milk. Sprinkle with coarse or regular sugar, if using.
- Bake for 35 to 45 minutes, or until the crust is golden brown and the pear filling is bubbling.
- Let cool for at least 10 minutes before slicing. Serve warm or at room temperature.
Notes
- For an easier version, a refrigerated store-bought pie crust can be used instead of making the crust from scratch.
- Asian pears stay somewhat firmer than many other pears after baking, giving the galette a pleasant texture.
