Sukuma Wiki (Sautéed Collard Greens with Tomatoes)
This healthy, budget-friendly collard greens dish is simmered with tomatoes, onions, garlic, and warm spices for a flavorful side that's easy to make on a busy weeknight.

Ingredients
- Collard greens or kale 1 bunch
- Tomatoes, diced 3 tomatoes
- Garlic, minced 1-2 Tsp
- White onion 1 large onion
- Canola oil, or any cooking oil 2 Tbsp
- Paprika 1 Tbsp
- Ground coriander 1/2 Tsp
- Turmeric 1/2 Tsp
- Cayenne pepper 1/2 Tsp
- Lemon juice 1 Tbsp
- Bouillon powder, or 1 cube 1 Tbsp
Instructions
- In a large skillet, add oil, onions, and garlic, and sauté for 2-3 minutes, stirring constantly to prevent burning.
- Then add tomatoes, curry, coriander, and paprika, and continue stirring for about 2 minutes.
- Add bouillon powder; stir until ingredients are thoroughly combined. Simmer for 5 minutes or more.
- Toss in the chopped collards, cayenne pepper, and lemon juice. Continue cooking for another 5-10 minutes until flavors have blended and greens are cooked to preferred doneness.
- Adjust seasonings, salt, and pepper, and turn off the heat. Let it cool slightly. Serve with serve with rice or crusty bread.
